Step 1: Beat egg whites stiff.
Step 2: In a large bowl, whisk together the flour, cornstarch, baking powder, baking soda, sugar and salt.
Step 3: Place yolks in a separate bowl and add the milk, oil, vanilla extract and vinegar.
Step 4: Whisk until blended.
Step 5: While the iron is heating up, pour the wet ingredients into the dry ingredients. Stir with a rubber spatula, scraping the walls of the bowl so every last bit gets combined.
Step 6: Next, uncap the club soda and pour it into the mix. Slowly stir the ingredients together.
Step 7: Fold in the egg whites, it's okay if you can still see traces of beaten egg white left in the batter.
Step 8: Pour a 1/4 cup mixture into a hot greased pam sprayed waffle iron.
