Ingredients

The ingredients are:
  • 2 pounds asparagus, tough ends trimmed (works best with thin spears, but if using the thicker ones, make sure to peel ends with a peeler)
  • 1/4 cup olive oil
  • Kosher or sea salt, to taste
  • Freshly ground black pepper, to taste
  • 1 lemon, scrubbed (See Note)

How to Make

  • Step 1: Heat the oven to 400-degrees F.

  • Step 2: Toss the asparagus with the oil and salt and pepper to taste - to save on washing dishes, you can prep this on a baking sheet, rather than dirtying a bowl. Slice the lemon very thin. Push the asparagus to one side and make a layer of lemon slices on the bottom of the baking sheet. Spread the asparagus on top of the lemon, and roast for 15 minutes, until the asparagus is tender and browning a bit.

  • Step 3: Serve hot or warm.

  • NOTE: Try to find organic lemon if you can find it, as it will not have been sprayed with something unfortunate. Otherwise, scrub the lemon very well with soap and hot water.
