Step 1: Soak beans overnight.
Step 2: Next day, cook 60 minutes with ham bone.
Step 3: Meanwhile, heat oil and add salt pork.
Step 4: Add onions, celery, potatoes and carrots and season to taste.
Step 5: Cook until softened, then add garlic and cook until fragrant.
Step 6: Add to bean pot and simmer, cover, adding water as needed and cook for 30 minutes.
Step 7: Add cabbage, parsley and vermicelli and simmer for 20 minutes more covered.
Step 8: Remove ham bone, and add meat back in, season to taste.
Step 9: Very last, add cheese to taste.
