Step 1: Fry bacon until crisp if you're not using crumbles. Drain on paper towels.
Step 2: Put sour cream or yogurt, mayonnaise, sugar, apple cider vinegar, salt, and pepper in a large bowl; whisk to combine.
Step 3: Add peas, red onion, cheddar cheese, and most of the cooked crispy bacon; gently stir to coat completely. Keep out a bit of bacon as garnish.
Step 4: Cover and refrigerate at least 1 hour before serving.
Step 5: Garnish with some crispy bacon before serving, if you still have some left!
