  • 1/2 cup biscuit mix
  • 3/4 cups milk
  • 3/4 cups pineapple juice
  • 1 cup mashed bananas (2 medium bananas)
  • 1/3 cup sweetened shredded coconut

How to Make

  • Step 1: Preheat the oven to 350°F.

  • Step 2: Beat the eggs, sugar, butter, and vanilla with a hand mixer.

  • Step 3: Pour the biscuit mix, milk, and pineapple juice into the mixture and continue mixing.

  • Step 4: Stir in the mashed banana and coconut with a spatula.

  • Step 5: Generously coat a 9-inch, deep-dish pie plate with butter and pour the mixture into the pie plate.

  • Step 6: Place the pie plate on a baking sheet and bake for 60 to 65 minutes until golden and the middle springs back up when touched.
