  • 2 pounds potatoes, peeled, diced (2 cups)
  • 1 teaspoon parsley flakes, dried
  • 4 cups water, boiling
  • 12 ounces tuna, undrained (1 can)
  • 1 tablespoon pimento, minced
  • 1/4 teaspoon paprika
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 2 cups milk, hot

How to Make

  • Step 1: Heat the fat. Could use bacon grease if you wish.

  • Step 2: Cook the onions and celery until translucent and season lightly.

  • Step 3: Boil potatoes until they are tender about 30 minutes.

  • Step 4: Add pimento, make a roux of butter and flour.

  • Step 5: Add to hot milk stirring until thickened.

  • Step 6: Add mixture to soup.

  • Step 7: Add fish stirring until combined.

  • Step 8: Season to taste, add paprika last.
