Ingredients

The ingredients are:
  • 4 ounces bacon
  • 1 cup onions, diced
  • 2 tablespoons bacon grease
  • 15 ounces tomatoes, petite, diced (1 can)
  • 2 cups okra, frozen, sliced in the round.
  • 2 cups chicken stock
  • 7 ounces white rice, dry (1 cup)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

How to Make

  • Step 1: Cook bacon and remove.

  • Step 2: Add bacon grease so it's 2 tablespoons.

  • Step 3: Cook onions until brown.

  • Step 4: Add tomatoes and okra, stir all of the vegetables together well.

  • Step 5: Season with salt and pepper.

  • Step 6: Add rice and stock.

  • Step 7: Stir again to make sure everything is mixed well.

  • Step 8: Cover and cook on medium low heat for 20 minutes.

  • Step 9: Don’t open the lid!

  • Step 10: Take off heat and let set covered for 5 minutes.

  • Step 11: Salt to taste and stir in crumbled bacon.
