Step 1: Cook bacon until crispy and remove.
Step 2: Take out all but a tablespoon of bacon grease.
Step 3: Fry onions and peppers just until tender and season lightly.
Step 4: Add rest of ingredients, cover and simmer on low for 35 minutes.
Step 5: Take off heat and let set covered for 5 minutes.
Step 6: Fold in bacon.
