Ingredients

The ingredients are:
  • 1 1/4 cups water
  • 3/8 teaspoon kosher salt, divided
  • 3/8 teaspoon pepper, divided
  • 1 cup couscous, uncooked
  • 2 tablespoons dill, fresh, chopped
  • 1/4 teaspoon lemon rind, grated
  • 1 teaspoon lemon juice
  • 2 teaspoons olive oil
  • 1 teaspoon butter
  • 3 tablespoons shallots, chopped
  • 1/4 cup white wine
  • 2 tablespoons whole-grain mustard
  • 1 tablespoon brown sugar
  • 24 ounces salmon fillets, about 1 inch thick (4)

How to Make

  • Step 1: Preheat broiler.

  • Step 2: In a saucepan over medium high heat bring 1 1/4 cups water to a boil and then stir in 1/8 teaspoon salt, 1/8 teaspoon pepper and the couscous; cover. Remove from heat and let stand for 5 minutes; stir in dill, rind and juice.

  • Step 3: In a saucepan over medium high heat heat the pan and then add the olive oil and butter; cook stirring until butter melts and then add the shallots and cook stirring for 2 minutes and then add the wine to he pan and bring to a boil and cook another 2 minutes and then stir in the mustard and the brown sugar. Remove from heat.

  • Step 4: In a foil lined rimmed cookie sheet, spray with cooking spray and then place the fillets on the pan. Sprinkle the fillets with 1/4 teaspoon salt and 1/4 teaspoon pepper. Spread half of the mustard mixture evenly over the fillets.

  • Step 5: Broil for 5-10 minutes or until desired doneness is done. Spread the rest of the mustard mixture over the fish and serve with the couscous.
