Ingredients

The ingredients are:
  • 1 3/4 cups flour
  • 1 1/2 cups rolled oats, quick-cooking
  • 1 1/4 cups sugar
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup raisins
  • Wet
  • 3 eggs
  • 1 2/3 cups applesauce
  • 1/3 cup oil
  • 1 tablespoon vegetable oil
  • 1/3 cup milk
  • Topping
  • 1/2 teaspoon cinnamon
  • 1/3 cup brown sugar, packed
  • 3 tablespoons pecans, minced

How to Make

  • Step 1: Grease two loaf pans, each about 4 by 8 inches; dust with flour and set aside.

  • Step 2: Preheat the oven to 350F degrees .

  • Step 3: In a large bowl, whisk together flour, oats, granulated sugar, salt, baking powder, baking soda, 1/2 teaspoon cinnamon and nutmeg, add raisins.

  • Step 4: In another bowl, whisk together eggs, applesauce, oil and milk.

  • Step 5: Add to flour mixture, stirring only until ingredients are uniformly moistened.

  • Step 6: Pour into prepared pans.

  • Step 7: Bake for 20 minutes.

  • Step 8: Stir together brown sugar, pecans and remaining 1/4 teaspoon cinnamon and sprinkle evenly over loaves.

  • Step 9: Return to oven and bake 27 to 33 minutes more, until a wooden pick inserted in the center comes out clean.

  • Step 10: Cool in pans for 20 minutes, then turn onto racks.
