Ingredients

The ingredients are:
  • 1 cup chayote squash, diced (this is about 1/2 a squash)
  • 1/2 carrot, peeled and minced
  • 2 potatoes, peeled and diced
  • 2 teaspoons culantro coyote, chopped or 4 teaspoons cilantro, chopped
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 4 cups vegetable stock
  • 2 pounds black beans, cooked (or sub six 15 ounce cans black beans, drained)
  • Salt (optional)
  • Pepper (optional)

How to Make

  • Step 1: In a large pot over medium high heat combine all the ingredients (squash - beans) bring to a boil and then lower heat and simmer for 25 -30 minutes.

  • Step 2: Using an immersion blender, blend until combined.

  • Step 3: Add salt and pepper to taste.
