  • 1 cup onion, diced
  • 8 ounces of linguica, skinned, diced
  • 4 cups chicken broth
  • 14 ounces white rice, dry (2 cups)
  • 1/2 teaspoon smoked paprika
  • 1/8 teaspoon pepper
  • 1/2 teaspoon salt
  • 15 ounces kidney beans, drained (1 can)
  • 1 cup peas, frozen
  • 2 tablespoons butter

How to Make

  • Step 1: In deep skillet, fry bacon until it's almost crispy.

  • Step 2: Then add onion and fry a little longer; then add linguica and fry a bit longer.

  • Step 3: When it's done, add the chicken broth.

  • Step 4: When broth boils, add rice, paprika and pepper.

  • Step 5: Cover and simmer over low flame for 20 minutes, then stir in peas and simmer for 5 minutes.

  • Step 6: At the end, stir in kidney beans and butter and take off heat covered.
