Ingredients

The ingredients are:
  • 8 tablespoons butter, softened, divided (unsalted)
  • 2 onions, sliced
  • 2 pounds ground beef
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • 1/2 cup mayonnaise
  • 3 tablespoons dijon mustard
  • 2 teaspoons paprika
  • 12 slices sourdough sandwich bread
  • 12 slices Cheddar cheese

How to Make

  • Step 1: In a large cast iron skillet over medium heat, melt 2 tablespoons butter and then add the onion and cook stirring occasionally until softened and golden brown (35 minutes). Remove onion from skillet and wipe skillet clean.

  • Step 2: In a bowl combine the beef, worcestershire salt and pepper; divide into 6 portions and shape each into a patty about the same size as the bread.

  • Step 3: In the same skillet on medium high heat cook the patties until browned (2-5 minutes per side). Remove patties from skillet and wipe the skillet clean.

  • Step 4: In a bowl combine the mayonnaise, mustard and paprika. Spread mixture onto one side of all the bread slices. Top half of the bread slices with 1 sliced cheese, patty, onions, 1 slice cheese and the remaining bread slice (so each sandwich will have 2 slices of cheese).

  • Step 5: In the same skillet over medium heat, melt 3 tablespoons butter and then add 3 sandwiches; cook until bread is golden brown and cheese is melted (3-5 minutes per side). Repeat with the remaining butter and the remaining 3 sandwiches.
