Ingredients

The ingredients are:
  • 1 pound ground pork
  • 1/2 cup breadcrumbs, fine, dry (can use gluten-free)
  • 1 egg, slightly beaten
  • 1 teaspoon salt, to taste
  • 1/4 teaspoon pepper
  • 1/2 teaspoon Worcestershire sauce
  • 15 ounces sauerkraut, drained, snipped (1 can)
  • 1/4 cup onion, chopped fine
  • 1/2 teaspoon caraway seeds
  • 5 ounces bacon (5 slices)

How to Make

  • Step 1: Preheat oven to 350º F.

  • Step 2: Combine ground pork, crumbs, egg, salt, pepper and Worcestershire sauce and mix thoroughly.

  • Step 3: Microwave bacon a couple minutes on waxed paper.

  • Step 4: Pat meat mixture to a 10 x 7 inch rectangle.

  • Step 5: Combine well drained sauerkraut, caraway seeds and onion and spread evenly over meat.

  • Step 6: Starting with narrow side, roll up meat jelly-roll fashion.

  • Step 7: Place loaf in shallow baking dish.

  • Step 8: Arrange bacon slices across top.

  • Step 9: Bake for 45 minutes or longer if needed.

  • Step 10: Let rest 5 minutes.

  • Step 11: Slice into pinwheels.
