Step 1: Simmer the potatoes, celery and onions in chicken broth, until celery is softened.
Step 2: Season lightly.
Step 3: Take out a cup of veggies and set aside.
Step 4: Add the cottage cheese.
Step 5: Puree with stick blender.
Step 6: Add milk, bacon bits and veggies back in and simmer for 5 minutes, don't boil.
Step 7: Season to taste.
