Step 1: Bring 1/4 cup honey, 1/4 cup water, and 2 wide lemon peel strips to a boil in a small saucepan over medium heat.
Step 2: Reduce the heat to maintain a simmer and cook until slightly reduced, 3 minutes.
Step 3: Remove the saucepan from the heat and let cool completely.
Step 4: Remove and discard the lemon peels.
Step 5: If not using immediately, refrigerate in an airtight container for up to 5 days.
Step 6: Make the cocktails:
Step 7: Place 4 ounces bourbon, 2 ounces lemon juice, and 2 ounces honey simple syrup in a cocktail shaker. Add enough ice to fill the shaker halfway.
Step 8: Seal the shaker and shake until the outside of the shaker is cold and frosty, about 30 seconds.
Step 9: Fill 2 old-fashioned glasses with ice.
Step 10: Pour the cocktail through a strainer into the glasses. Garnish each cocktail with a lemon twist.
