How to Make

  • Step 1: In a medium mixing bowl, beat eggs about 5 minutes with an electric mixer until soft peaks form.

  • Step 2: In a separate bowl, blend together milk and pumpkin.

  • Step 3: Add biscuit mix, sugar, cinnamon, nutmeg, ginger, vegetable oil to pumpkin mix.

  • Step 4: Mix until blended.

  • Step 5: Fold beaten eggs into pumpkin mix.

  • Step 6: Drop stiff batter by tablespoons onto a hot, greased griddle.

  • Step 7: When puffed and browned, turn and cook on the other side.

  • Step 8: Serve with warm maple syrup.
