Step 2: Heat oil in stock pot, add onions, carrots and celery.
Step 3: Season lightly.
Step 4: Saute on low for 5 minutes.
Step 5: Add garlic and cook for 1 minute.
Step 6: Add spices, and cook 1 minute.
Step 7: Add lentils, stir.
Step 8: Add stock.
Step 9: Simmer for 45 minutes, stirring occasionally.
Step 10: Add seasoning to taste.
Step 11: Add lemon juice and parsley.
