  • 2 carrots, small dice
  • 2 celery sticks, small dice
  • 1/2 teaspoon salt

  • 2 cloves garlic, minced
  • 1 teaspoon fennel seeds
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon rosemary, dried
  • 1 teaspoon lemon zest
  • 1 teaspoon ground coriander
  • 7 ounces lentils, dry (1 cup)
  • 8 cups vegetable stock
  • Garnish
  • 1 tablespoon lemon juice
  • 1/3 cup flat leaf parsley, chopped

How to Make

  • Step 1: Get spices ready.

  • Step 2: Heat oil in stock pot, add onions, carrots and celery.

  • Step 3: Season lightly.

  • Step 4: Saute on low for 5 minutes.

  • Step 5: Add garlic and cook for 1 minute.

  • Step 6: Add spices, and cook 1 minute.

  • Step 7: Add lentils, stir.

  • Step 8: Add stock.

  • Step 9: Simmer for 45 minutes, stirring occasionally.

  • Step 10: Add seasoning to taste.

  • Step 11: Add lemon juice and parsley.
