  • 24 ounces corn, frozen
  • 1 cup red bell pepper, chopped
  • 1 cup green bell pepper, chopped
  • 1 cup onion, chopped
  • 1/4 cup vegetable stock
  • 2 tablespoons butter
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper, to taste
  • 8 ounces cream cheese
  • 2 cups baby spinach, fresh

How to Make

  • Step 1: In Pam sprayed crockpot, layer the corn peppers and onions.

  • Step 2: Dot butter on top then dot cream cheese.

  • Step 3: Add stock and season to taste.

  • Step 4: Cook on low for 3 hours.

  • Step 5: Last 15 minutes add spinach.

  • Step 6: Cook until it's wilted, stir.

  • Step 7: Season to taste.
