  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 carrots, diced
  • 14 ounce pumpkin puree, canned (NOT pumpkin pie mix)
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 16 ounces salsa
  • 2 cups tomato sauce (fermented)
  • 2 cups tomato soup
  • 1 teaspoon cumin
  • 2 cups noodles, dry (cooked according to package directions)
  • Cheese (optional)

How to Make

  • Step 1: Cook the diced onion, pepper and carrots in the melted coconut oil in a large pot until tender.

  • Step 2: Add the ground turkey and cook until no longer pink.

  • Step 3: Add the remaining ingredients, bring to a boil and then simmer for one hour.

  • Step 4: Add noodles and stir well. Serve topped with cheese, if desired.
