Ingredients

The ingredients are:
  • 5 tablespoons olive oil (75 ml)
  • 1 1/2 cups cornmeal, fine (220 g)
  • 1 1/4 cups flour (160 g)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoons cumin seeds, toasted and ground
  • 1/2 teaspoon paprika
  • 1 tablespoon sugar
  • 1 cup milk (240 ml)
  • 3/4 cup yogurt, plain (180 g)
  • 2 eggs, beaten
  • 1 tablespoon lemon juice
  • 3 green onions, chopped
  • 3/4 cup feta cheese, crumbled (125 g)
  • Parsley, chopped
  • Salt
  • White pepper

How to Make

  • Step 1: Preheat oven to 400 degrees F (200 degrees C).

  • Step 2: Oil a cast iron skillet or a round baking pan.

  • Step 3: In a large bowl combine the dry ingredients (cornmeal - sugar) plus 1 1/2 teaspoons salt and 1/4 teaspoon white pepper.

  • Step 4: In another bowl combine the wet ingredients (milk -lemon juice).

  • Step 5: Stir wet ingredients into the dry ingredients. Fold in the green onions, feta and herbs.

  • Step 6: Pour into prepared pan and bake for 30-35 minutes or until golden brown.

  • Step 7: Let cool 15 minutes before serving.
