  • 2 cups onion, chopped
  • 4 cups mushrooms, sliced
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon Cajun seasoning
  • 1 red bell pepper, chopped
  • 1 orange bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 3 cups broccoli florets
  • 1 (15 ounce) can diced tomatoes (undrained)
  • 1 (16 ounce) carton egg white
  • 1 large egg, well beaten

How to Make

  • Step 1: Heat olive oil in a large skillet; add onion, mushrooms, garlic and seasonings and cook 10 minutes, stirring occasionally.

  • Step 2: Add peppers, broccoli and tomatoes; cook an additional 5 minutes, stirring occasionally.

  • Step 3: Smooth vegetable mixture with a spoon or spatula; combine egg white and egg and pour over vegetable mixture.

  • Step 4: Cover and cook an additional 5 minutes, or until egg whites are set.

  • Step 5: If desired, you can top with some shredded cheese, sour cream, or salsa to serve.
