Ingredients

The ingredients are:
  • 1 1/2 pounds chicken legs
  • 1 1/2 pounds chicken thighs
  • 4 tablespoons butter, melted
  • 4 cups onions, sliced (4 large onions)
  • 4 ounces mushrooms, sliced, drained, save juice (1 can)
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 teaspoons chicken bouillon (2 cubes)
  • 4 cups water, boiling
  • 7 ounces dry white rice, not minute rice (1 cup)

How to Make

  • Step 1: Heat butter in 9x13 casserole.

  • Step 2: Add layers of chicken and onions on top of butter, layer mushrooms with onions.

  • Step 3: Cover bake in 350 degrees F oven for 40 minutes. (Original recipe says 90 minutes)

  • Step 4: Uncover.

  • Step 5: Take chicken mixture out and add rice; then add chicken mixture back on top.

  • Step 6: Add bouillon cubes to boiling water and mix, pour over chicken mixture.

  • Step 7: Cover and bake for about 20 minutes or until rice is cooked.
