Ingredients

The ingredients are:
  • 3 cups flour
  • 1/2 cup sugar
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon cardamom, ground
  • 1 teaspoon salt
  • 1/2 cup butter, room temperature
  • 1 1/2 cups pistachios, shelled and chopped
  • 2 limes, zest only
  • 1 cup buttermilk
  • 1 tablespoon maple syrup
  • 2 tablespoons buttermilk
  • 2 teaspoons sugar

How to Make

  • Step 1: Preheat oven to 425 degrees F.

  • Step 2: Put parchment paper onto baking sheets.

  • Step 3: In a bowl whisk together the dry ingredients (flour -salt) and then using your hands blend in the butter until crumbly.

  • Step 4: Add the chopped pistachios and lime zest; toss.

  • Step 5: Stir in buttermilk and maple syrup --- do not overmix.

  • Step 6: Divide dough into two balls and place on floured surface. Pat dough down.

  • Step 7: For glaze pour a little buttermilk on top of each mound, spreading evenly with a pastry brush and then sprinkle the sugar over all.

  • Step 8: Cut each mound into 8 wedges.

  • Step 9: Place scones on baking sheets and bake for 15 minutes or until puffy and golden brown.
