Step 1: Slice bok choy lengthwise (even if using baby bok choy). Wash in between leaves to remove dirt and grit, being careful not to tear the leaves apart,
Step 2: Place all sauce ingredients in a small bowl and stir to combine. Set aside.
Step 3: Bring water to a boil in a pot big enough to hold the bok choy. Lower the bok choy into the water and blanch just until the leaves turn bright green - about 1 minute for large bok choy, or just 30 seconds for baby bok choy.
Step 4: Remove bok choy from boiling water and set aside. Discard the water and, in the same pan, add the sauce ingredients that were set aside earlier. Bring to a boil, reduce heat, and stir until the sauce thickens.
Step 5: To serve, place bok choy on plate and drizzle a good amount of sauce over.
