Step 1: In a saucepan add water and bring it to a boil over medium high heat.
Step 2: Remove the papery husks of the the tomatillos by running them under warm water and then one at a time drop the tomatillos into the boiling water and simmer for 5 minutes or until they are slightly softened; drain and cool.
Step 3: In a food processor puree the tomatillos and then remove them and place in a bowl.
Step 4: Add the chiles, jalapeño, onion and salt to food processor and chop and add to tomatillos.
Step 5: Add the salt, lime zest, cilantro and pureed tomatillos to the food processor and chop. Remove from food processor. Blend in sour cream, if using.
Step 6: Remove all and stir together -- may be stored in refrigerator.
