Step 1: Line a 9 inch cake pan with parchment paper.
Step 2: In a bowl combine the flour, 1/2 cup of sugar, baking powder and 1 tablespoon canola or 2 teaspoons cinnamon.
Step 3: Cut butter into 1 inch pieces and add to dry ingredients; with mixer blend butter into the flour until la coarse meal is formed. Stir in milk and blend until dough comes together.
Step 4: Wrap dough in plastic and refrigerate or proceed as below.
Step 5: Preheat oven to 400 degrees F.
Step 6: To make the shortcakes roll dough out on a floured board to 1/2 inch thickness and then cut shortcakes out with a 3 inch cutter or a coffee cup. Place shortcakes on a papered pan.
Step 7: In a cup or bowl combine 2 tablespoons sugar with 1/2 tablespoon canola or 1/2 teaspoon cinnamon and sprinkle over shortcakes.
Step 8: Bake for 20 minutes or until tops are golden brown; remove from oven and let cool.
