Ingredients

The ingredients are:
  • 6 tablespoons extra-virgin olive oil, plus more for brushing
  • 3 tablespoons red wine vinegar
  • 3 teaspoons Greek seasoning, divided (or 2 t. dried Italian seasoning and 1 t. kosher salt)
  • 4 chicken breast cutlets (4 or 5 oz)
  • 2 tablespoons tahini
  • 1 tablespoon honey
  • 8 ounces feta cheese, block, drained, patted dry, and cut into 3/4 inch cubes (about 2 cups)
  • 6 cups chopped romaine lettuce
  • 1 1/2 cups thinly sliced Persian cucumbers
  • 1 cup cherry tomatoes, halved

How to Make

  • Step 1: Preheat broiler with oven rack about 8 inches from the heat source.

  • Step 2: Whisk the oil, vinegar, and 2 1/2 teaspoons Greek seasoning in a large bowl. Transfer 1/4 cup of this oil mixture to a small bowl.

  • Step 3: Add chicken to large bowl with oil mixture and toss to coat. Let stand at room temperature for about 20 minutes.

  • Step 4: Meanwhile, whisk tahini, 2 tablespoons water, and honey into the oil mixture in the small bowl.

  • Step 5: Place marinated chicken on a large rimmed baking sheet lined with aluminum foil and discard the marinade.

  • Step 6: Sprinkle with remaining 1/2 teaspoon Greek seasoning.

  • Step 7: Arrange the feta cubes around chicken and brush with oil. Broil until the feta is browned and chicken is cooked through, about 10-13 minutes. Let stand for 5 minutes before slicing the chicken into 1/4 inch thick slices.

  • Step 8: Toss together the salad ingredients.
