Ingredients

The ingredients are:
  • 8 manicotti shells
  • 1 egg, beaten
  • 1 1/2 cups chicken, cooked (rotisserie)
  • 1/2 cup frozen chopped broccoli, thawed (or can substitute fresh)
  • 1/4 cup fine dry bread crumbs
  • 3 green onions (scallions), chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 cups Colby or Monterey Jack cheese, shredded
  • 10 3/4 ounces cream of chicken soup (1 can)
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon poultry seasoning
  • 1/4 teaspoon black pepper (or to taste)
  • 1/2 cup milk

How to Make

  • Step 1: Preheat oven to 350-degrees F.

  • Step 2: Cook manicotti according to package directions; drain.

  • Step 3: For Filling: Combine egg, chicken, broccoli, bread crumbs, scallions, salt and pepper. Add 1/2 cup of the cheese; toss to mix. Spoon filling into manicotti shells.

  • Step 4: Arrange manicotti in 2-quart rectangular baking dish. In bowl, stir together soup, onion powder, poultry seasoning, black pepper, and milk; pour over manicotti. Cover with foil. Bake for 30 - 35 minutes or until heated through. Remove foil; sprinkle with remaining cheese. Let stand 5 minutes before serving.
