Step 1: In a large bowl, combine the burger ingredients, ground chicken through hot sauce. Mix with your hands to combine well. Divide the mixture into 6 even portions (about 6 ounces each). Press each portion into a patty, about 3/4 inch thick. Place the patties on small squares of parchment and refrigerate for one hour.
Step 2: Heat a large skillet over medium heat and add the oil. Remove the patties from the parchment paper, place on the skillet, two at a time, and let cook for 5 minutes. Flip and cook the other side until the internal temperature of the burger reaches 165˚ F, and both sides are well browned, about 3 more minutes.
Step 3: Serve immediately on toasted buns with toppings of your preference.
