Ingredients

The ingredients are:
  • 2 large ripe tomatoes, peeled and sliced
  • 1 ear sweet white corn, cooked and kernels cut off the cob
  • 1 - 2 green onions or scallions, thinly sliced (See NOTE for substitutions)
  • DRESSING
  • 2 tablespoons red wine vinegar
  • 2 tablespoon balsamic vinegar
  • 1/2 cup olive oil
  • 2 - 3 tablespoons fresh basil, finely chopped
  • Kosher or coarse sea salt, to taste
  • Freshly ground black pepper, to taste

How to Make

  • Step 1: Arrange the tomatoes on a platter. Sprinkle with the corn and sliced green onions. Pour dressing evenly over the salad and serve!

  • DRESSING

  • Step 2: Whisk together all the ingredients, seasoning with salt and pepper, to taste.

  • NOTE: You may substitute 1 large Vidalia onion, thinly sliced with the corn and green onions, and sprinkle the dressed salad with 1/4 cup fresh mint in place of basil.
