Step 1: Place the sausage in a skillet and fry, turning as necessary, until nearly done (see Note). Add the apple wedges and sauté in the sausage fat until almost soft but not mushy (if there isn't enough fat in the pan, you can either add a touch of oil, butter, or bacon fat).
Step 2: Season with a good grind of black pepper, to taste.
Step 3: Drain the sausage and apple quickly on paper towels, then arrange on a platter and serve hot.
