Ingredients

The ingredients are:
  • 1/2 pound butter (2 sticks)
  • 2 cups sugar
  • 6 eggs
  • 11 ounces vanilla wafers
  • 7 ounces flaked coconut, sweetened
  • 1 cup chopped pecans
  • FROSTING
  • 4 ounces cream cheese
  • 1/4 cup butter
  • 2 cups confectioners guar
  • 1 teaspoon vanilla extract

How to Make

  • Step 1: Preheat oven to 350-degrees Fahrenheit.

  • Step 2: Crush vanilla wafers in a large sealable bag with a rolling pin; set aside.

  • Step 3: Cream butter and sugar. Add eggs, vanilla wafers, coconut and nuts. Pour into well greased 9 x 13-inch pan and bake for 1 1/2 hours or until tester inserted in cake come out clean.

  • NOTE: For a more formal presentation, this recipe may be doubled for a layer cake and baked in three 9" round pans; then frosted in-between layers and outer cake (of course, the frosting would also need to be increased, accordingly.)
