Step 1: Preheat an outdoor grill on medium heat and lightly oil the grate.
Step 2: Combine ground pork, ground beef, ground lamb, and egg in a large bowl.
Step 3: Add garlic, black pepper, salt, baking soda, cayenne pepper, and paprika. Mix well using your hands and form into patties about 1/2 inch thick or form into thin sausages about 3/4 of an inch thick.
Step 4: Cover with plastic wrap and refrigerate for one hour or up to one day.
Step 5: Cook patties/sausages on the preheated grill, turning occasionally, until no longer pink in the center, about 20 - 30 minutes. An instant read thermometer inserted into the center should read 160° F.
Step 6: Serve patties on toasted potato buns or sausages on pita bread with sour cream, grilled peppers and onions and fresh tomatoes.
