Ingredients

The ingredients are:
  • 1 avocado, peeled, seeded and coarsely chopped (chop just before making the dressing to prevent discoloration) (ripe)
  • 1/3 cup orange juice (fresh squeezed)
  • 1/4 cup lime juice (fresh squeezed)
  • 1 tablespoon honey
  • 1/2 teaspoon salt, to taste
  • 1/8 teaspoon cayenne pepper, or to taste
  • Salad
  • 3 avocados, peeled, seeded and thinly sliced (ripe)
  • 2 tablespoon lime juice (fresh squeezed)
  • 1 head red leaf lettuce, leaves left whole (small)
  • 3 oranges, peeled and thinly sliced (seedless)
  • 1 jicama, peeled and coarsely shredded (if you can't find jicama, you can substitute with celery root or even apple. If using apples, slice and do not shred) (small)
  • 3/4 cup black olives, sliced

How to Make

  • Avocado Dressing

  • Step 1: In a blender, combine all ingredients and process until smooth; adjust seasonings, if desired, and set aside.

  • Salad

  • Step 2: Pour the lime juice over the sliced avocado to prevent discoloration.

  • Step 3: Line serving platter with the lettuce leaves. Mound shredded jicama (or substitutes noted in list of ingredients). Arrange avocado and orange slices around jicama, slightly overlapping and then top with olives.

  • Step 4: Drizzle half the avocado dressing over the salad and serve remaining dressing on the side.
