Step 1: In a large pot over medium heat, heat oil.
Step 2: Add onion and cook, stirring, until soft, 5 minutes.
Step 3: Add garlic and cook until fragrant, 1 minute more, and stir in tomato paste and red pepper flakes.
Step 4: Add chicken, tomatoes and broth and bring to a simmer.
Step 5: Add penne and cook 20 minutes on a low simmer, adding water as needed.
Step 6: Add mozzarella and Parmesan cheeses, parsley and season generously with salt and pepper to taste
Step 7: Let cheese melt (they had a lot) then ladle into bowls.
