Ingredients

The ingredients are:
  • 1 tablespoon olive oil
  • 1 cup onion, chopped
  • 3 cloves garlic, minced
  • 3 tablespoons tomato paste
  • 1 teaspoon crushed red pepper flakes, to taste
  • 28 ounces crushed tomatoes (1 can)
  • 6 cups chicken broth
  • 8 ounces dry penne pasta
  • 1 pound chicken breast (cooked boneless, skinless, chopped)
  • 8 ounces mozzarella cheese, shredded
  • 8 ounces parmesan cheese, shredded
  • 1 tablespoon fresh parsley, minced
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper

How to Make

  • Step 1: In a large pot over medium heat, heat oil.

  • Step 2: Add onion and cook, stirring, until soft, 5 minutes.

  • Step 3: Add garlic and cook until fragrant, 1 minute more, and stir in tomato paste and red pepper flakes.

  • Step 4: Add chicken, tomatoes and broth and bring to a simmer.

  • Step 5: Add penne and cook 20 minutes on a low simmer, adding water as needed.

  • Step 6: Add mozzarella and Parmesan cheeses, parsley and season generously with salt and pepper to taste

  • Step 7: Let cheese melt (they had a lot) then ladle into bowls.
