Step 1: Heat the oil in a stock pot over medium heat.
Step 2: Add the onion, season with salt and pepper to taste and cook, covered, stirring occasionally until tender, 10 minutes.
Step 3: Stir in the garlic and ginger and cook, stirring for 1 minute.
Step 4: Stir in the cumin (they had 2 teaspoons, I can't) and cayenne and cook 1 minute more.
Step 5: Add the sweet potatoes and mix to combine.
Step 6: Add the tomatoes, peanut butter, water bring to a boil.
Step 7: Season to taste
Step 8: Serve with cilantro and peanuts.
