Ingredients

The ingredients are:
  • 2 tablespoons olive oil
  • 1 cup onion, diced
  • 3/4 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • 4 cloves garlic, smashed
  • 2 tablespoons fresh ginger, grated
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cayenne
  • 2 pounds sweet potatoes, peeled, diced
  • 28 ounces crushed tomatoes (1 can)
  • 1/2 cup peanut butter
  • 4 cups water
  • Topping
  • 1 tablespoon fresh cilantro, minced
  • 1/4 cup roasted peanuts

How to Make

  • Step 1: Heat the oil in a stock pot over medium heat.

  • Step 2: Add the onion, season with salt and pepper to taste and cook, covered, stirring occasionally until tender, 10 minutes.

  • Step 3: Stir in the garlic and ginger and cook, stirring for 1 minute.

  • Step 4: Stir in the cumin (they had 2 teaspoons, I can't) and cayenne and cook 1 minute more.

  • Step 5: Add the sweet potatoes and mix to combine.

  • Step 6: Add the tomatoes, peanut butter, water bring to a boil.

  • Step 7: Season to taste

  • Step 8: Serve with cilantro and peanuts.
