Ingredients

The ingredients are:
  • 1 1/3 cups water
  • 2/3 cup bulgur
  • 1 pound chicken breast, boneless
  • 1 teaspoon kosher salt
  • 1/2 teaspoon pepper
  • 4 cups arugula
  • 2 cups cherry tomatoes, halved
  • 2 cups peaches, sliced
  • 3 tablespoons olive oil
  • 2 tablespoons rice vinegar

How to Make

  • Step 1: In a saucepan over high heat bring the water the bulgur to a boil and then reduce to medium low; cover and simmer for 10 minutes; drain and rinse under cold water; drain again and dry on paper towels.

  • Step 2: Meanwhile heat a grill pan which has been sprayed with cooking spray on high and then sprinkle chicken with 1/2 teaspoon salt and the pepper. Grill chicken, turning until done (5-10 minutes); remove to cutting board and let rest for a few minutes before slicing into strips.

  • Step 3: In a large bowl add the bulgur, arugula, tomatoes and peaches along with 1/2 teaspoon salt, the oil and vinegar; toss. Divide mixture among 4 plates and top with chicken strips.
