Step 1: Add the rice to 2 1/2 cups water and bring to a boil. Lower heat and cook until water is absorbed and rice is tender - about 40-50 minutes.
Step 2: Chill.
Step 3: Stir in the white beans, tomatoes, chopped dill and white parts of onion.
Step 4: Combine olive oil, lemon juice and minced garlic, and stir into rice mixture.
Step 5: Garnish with green parts of onions and extra dill.
