Ingredients

The ingredients are:
  • 1 1/2 cups brown rice
  • 1 cup white beans, cooked
  • 1 cup cherry or grape tomatoes, halved
  • 1/4 cup fresh dill or 1 tablespoon dried
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice, fresh is best
  • 1 tablespoon garlic, minced
  • 2 green onions, separate green and white parts, chopped

How to Make

  • Step 1: Add the rice to 2 1/2 cups water and bring to a boil. Lower heat and cook until water is absorbed and rice is tender - about 40-50 minutes.

  • Step 2: Chill.

  • Step 3: Stir in the white beans, tomatoes, chopped dill and white parts of onion.

  • Step 4: Combine olive oil, lemon juice and minced garlic, and stir into rice mixture.

  • Step 5: Garnish with green parts of onions and extra dill.
