Step 1: Prepare vinaigrette by mixing all ingredients (from oil - black pepper); place in a bowl and set aside.
Step 2: Bring a medium saucepan of salted water to a boil. (Add about 1/2 teaspoon salt for every cup of water). Add green beans and cook until tender but not completely soft, but crisp tender instead, approximately 5 minutes.
Step 3: Add cooked beans directly into bowl containing dressing while still warm. Toss to coat.
Step 4: Cover and refrigerate for a minimum of 45 minutes (can prepare ahead and refrigerate overnight).
Step 5: Just before serving, gently mix in tomato wedges and onion slices. Top with a healthy sprinkling of Parmesan cheese. Serve and enjoy!
