Ingredients

The ingredients are:
  • Vinaigrette
  • 1/3 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 clove garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon prepared yellow mustard
  • Ground black pepper, to taste
  • Remaining Ingredients
  • 1 pound green beans, fresh or frozen thin (French Style)
  • 2 tomatoes, cut in wedges
  • 1 small onion, sliced thin
  • 1/4 cup Parmesan cheese, freshly grated (amount is flexible)

How to Make

  • Step 1: Prepare vinaigrette by mixing all ingredients (from oil - black pepper); place in a bowl and set aside.

  • Step 2: Bring a medium saucepan of salted water to a boil. (Add about 1/2 teaspoon salt for every cup of water). Add green beans and cook until tender but not completely soft, but crisp tender instead, approximately 5 minutes.

  • Step 3: Add cooked beans directly into bowl containing dressing while still warm. Toss to coat.

  • Step 4: Cover and refrigerate for a minimum of 45 minutes (can prepare ahead and refrigerate overnight).

  • Step 5: Just before serving, gently mix in tomato wedges and onion slices. Top with a healthy sprinkling of Parmesan cheese. Serve and enjoy!
