  • 1 tablespoon butter
  • 3 eggs, beaten
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper

  • 1 ounce fresh baby spinach, chopped
  • 1 ounce Swiss cheese, shredded
  • 1 ounce cheddar cheese, shredded
  • 1 ounce feta cheese, crumbled
  • 1 ounce Monterey Jack cheese, shredded

How to Make

  • Step 1: Beat eggs, and season to taste.

  • Step 2: Melt butter in skillet.

  • Step 3: Add eggs.

  • Step 4: Save a bit of each cheese for the top.

  • Step 5: On one side add Swiss cheese and add cheddar and feta, add spinach as much as makes you happy, then add cheddar.

  • Step 6: Flip lid over and add extra cheese to top and cover cooking until spinach gets wilted and cheese melts.
