The ingredients are:
  • 2 pounds sweet potatoes large, peeled, diced (2)
  • 2 tablespoons olive oil
  • 2 garlic cloves ,minced
  • 1/2 teaspoon salt
  • 1/8 teaspoon white pepper
  • 1/2 teaspoon ground turmeric (it called for 2 teaspoons)
  • 1 teaspoon ground cardamom
  • 1 tablespoon thyme leaves fresh

How to Make

  • Step 1: Preheat oven to 400 degrees.

  • Step 2: In a large bowl, combine all ingredients except the fresh thyme.

  • Step 3: Toss well to coat the potatoes in the seasonings and oil.

  • Step 4: Spread in an even layer on a baking sheet and bake for 40 minutes, stirring the potatoes about 1/2 way through.

  • Step 5: Once tender, remove the potatoes from the oven and sprinkle with the fresh thyme.
