Step 1: Mix all the ingredients in a large re-sealable plastic bag.
Step 2: Refrigerate until ready to use. (This mixture will keep as long as the expiry date on the Parmesan cheese container.)
Step 3: When ready to use, place the amount needed in a plastic bag with the fish fillets and shake to coat.
Step 4: Deep fry until golden and crispy.
