  • 1 teaspoon dried oregano

  • 1/2 teaspoon salt
  • 1/2 teaspoon cayenne pepper
  • 20 ounces boneless, skinless red snapper fillets (4)
  • 1 tablespoon extra-virgin olive oil

How to Make

  • Step 1: Preheat grill to medium-high (400° to 450°F). Combine paprika, pepper, onion powder, garlic power, oregano, thyme, salt and cayenne in a small bowl.

  • Step 2: Brush fish all over with oil; sprinkle the seasoning evenly over both sides of fish, pressing to adhere.

  • Step 3: Oil the grill grates. Grill the fish, covered, until it flakes easily and a thermometer inserted in the thickest part register 145°F, 3 to 5 minutes per side.

  • Step 4: Serve with lemon wedges.
