Ingredients

The ingredients are:
  • 1/4 cup mayonnaise
  • 3 tablespoons chopped herbs (such as basil, tarragon or cilantro)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt, divided
  • 1/2 teaspoon pepper, divided
  • 1 1/4 pounds cod, cut into 4 portions
  • 2 medium tomatoes, sliced

How to Make

  • Step 1: Position rack about 4 inches from heat source and preheat broiler to high. Line a rimmed baking sheet with foil.

  • Step 2: Stir mayonnaise, herbs, garlic powder, onion powder, 1/4 teaspoon salt and 1/4 teaspoon pepper together in a small bowl.

  • Step 3: Sprinkle the remain 1/4 teaspoon each salt and pepper on both sides of cod. Place fish on the prepared baking sheet and spread the mayonnaise mixture over each piece top with tomato slices.

  • Step 4: Broil until the fish flakes easily, about 8 minutes.
