Step 1: Preheat oven to 400°F and line a rimmed baking sheet with parchment paper. Set aside.
Step 2: After grating zucchini, transfer to a clean towel. Bundle up towel and squeeze out any excess moisture.
Step 3: Add squeezed zucchini to a large bowl, along with garlic, onion, egg, breadcrumbs, parmesan, chives, thyme, salt, and pepper.*SEE NOTE. Mix until well combined.
Step 4: Scoop out with small ice cream scoop (about 2 tablespoons) and shape into balls, roll each ball in seasoned Panko breadcrumbs, and place on prepared baking sheet.
Step 5: Bake until golden brown, 25-30 minutes. Dip in ranch, sour cream or marinara sauce. Enjoy!
