Ingredients

The ingredients are:
  • 1 cup zucchini, grated
  • 1 clove garlic, grated
  • 3 tablespoons grated onion
  • 1/3 cup breadcrumbs (seasoned)
  • 1/2 cup parmesan cheese, freshly grated
  • 1 large egg, beaten
  • 2 tablespoons fresh chives, minced
  • 1/4 teaspoon dried thyme, rubbed between fingers
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3/4 cup Panko breadcrumbs (seasoned)

How to Make

  • Step 1: Preheat oven to 400°F and line a rimmed baking sheet with parchment paper. Set aside.

  • Step 2: After grating zucchini, transfer to a clean towel. Bundle up towel and squeeze out any excess moisture.

  • Step 3: Add squeezed zucchini to a large bowl, along with garlic, onion, egg, breadcrumbs, parmesan, chives, thyme, salt, and pepper.*SEE NOTE. Mix until well combined.

  • Step 4: Scoop out with small ice cream scoop (about 2 tablespoons) and shape into balls, roll each ball in seasoned Panko breadcrumbs, and place on prepared baking sheet.

  • Step 5: Bake until golden brown, 25-30 minutes. Dip in ranch, sour cream or marinara sauce. Enjoy!

  • Might also be good with a little softened cream cheese or creamy garlic & herb goat cheese mixed in, about 2 tablespoons.
