Ingredients

The ingredients are:
  • 3/4 cup sugar
  • 1/2 cup vegetable oil (I used canola)
  • 2 eggs
  • 1 cup mashed ripe bananas (about 3 medium)
  • 1/3 cup sour cream (or Greek yogurt)
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1 1/2 cups all-purpose flour (I used unbleached)
  • Option: add 1 teaspoon baking powder for a lighter, fluffler, more cake-like texture (Suggested by Derf)

How to Make

  • Step 1: Heat oven to 350. Mist bottom of a loaf pan (what I used was 8 1/2 x 4 1/2) with nonstick spray.

  • Step 2: In large bowl, beat together suar and oil. Add eggs, banana, sour cream, vanilla and salt and blend well. Add flour and baking soda together and stir into wet ingredients until just moistened. Pour into prepared pan.

  • Step 3: Bake 60 mins or until toothpick comes out clean. Cool 10-15 minutes and remove from pan. Finish cooling on rack.
