Ingredients

The ingredients are:
  • 8 cups fresh baby spinach or torn fresh spinach
  • 1 1/2 cups peeled, seeded, and chopped cucumber
  • 1/3 cup red onion, cut into thin wedges
  • 12 ounces pork tenderloin, trimmed and cut into 1/4-inch slices
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons olive oil
  • 2 tablespoons shallot, finely chopped
  • 1/4 cup cider vinegar
  • 1/4 cup pure maple syrup
  • 1/4 cup sliced almonds, toasted

How to Make

  • Step 1: In a large bowl combine spinach, cucumber, and onion. Sprinkle pork with salt and pepper.

  • Step 2: In a large skillet heat 1 tablespoon of the oil over medium-high heat. Add pork; cook 2 to 3 minutes or just until slightly pink in center, turning once. Add pork to spinach mixture.

  • Step 3: For dressing, in skillet heat the remaining 1 tablespoon oil over medium heat. Add shallot, cook and stir 2 minutes or until tender. Stir in vinegar and maple syrup. Simmer, uncovered, 1 1/2 to 2 minutes or until slightly thickened. Season to taste with additional salt and pepper.

  • Step 4: Pour dressing over spinach mixture, toss to coat. Top with almonds.
