Step 1: In a large bowl combine spinach, cucumber, and onion. Sprinkle pork with salt and pepper.
Step 2: In a large skillet heat 1 tablespoon of the oil over medium-high heat. Add pork; cook 2 to 3 minutes or just until slightly pink in center, turning once. Add pork to spinach mixture.
Step 3: For dressing, in skillet heat the remaining 1 tablespoon oil over medium heat. Add shallot, cook and stir 2 minutes or until tender. Stir in vinegar and maple syrup. Simmer, uncovered, 1 1/2 to 2 minutes or until slightly thickened. Season to taste with additional salt and pepper.
Step 4: Pour dressing over spinach mixture, toss to coat. Top with almonds.
