Step 1: Mix all spices together.
Step 2: Brown ground beef and ground pork in a large stock pot over medium heat.
Step 3: Ensure that the meat is well crumbled. (Folks have also used vita mixer, or anything that crumbles the meat fine. They utilized a potato masher for this.)
Step 4: When you think it is done, mash some more.
Step 5: When the meat is completely browned cover saucepan and turn heat to low.
Step 6: After ten minutes, remove the ground meat from the heat and drain.
Step 7: While the meat is simmering, in a separate pan mix the water, Wondra and the cornstarch. (They typically also added all dry ingredients to a separate bowl at this time.)
Step 8: Whisk thoroughly as it's added until it's dissolved into the water.
Step 9: Add drained meat, all the dry ingredients, vinegar and tomato paste to the water mixture.
Step 10: Place the pan over medium heat and bring to a boil. Stir occasionally or it will burn if you walk away!!!!!
Step 11: When chili begins to boil, reduce heat and simmer for 1 hour.
Step 12: Once again stirring occasionally.
