Ingredients

The ingredients are:
  • 1 tablespoon olive oil
  • 8 ounces shrimp, tails attached (16/20 count)
  • 1 garlic clove, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon lemon pepper, to taste
  • 1/4 teaspoon crushed red pepper flakes
  • Saute
  • 1 tablespoon olive oil
  • 1 cup yellow bell pepper, sliced thin
  • 2 tomatoes, chopped
  • 1/4 cup scallion, sliced thin
  • 1/8 teaspoon cumin, ground
  • 2 tablespoons fresh parsley, minced

How to Make

  • Step 1: In a bowl, toss shrimp with 1 tablespoon olive oil, 1/8 teaspoons salt, lemon pepper and red pepper flakes.

  • Step 2: Set aside to marinate for 15 minutes at room temperature. (put in frig if your squeamish)

  • Step 3: In a large skillet, heat remaining 1 tablespoon olive oil over medium-high heat.

  • Step 4: Add bell peppers, scallions, garlic, cumin to taste, 1/8 teaspoons salt, 1/8 teaspoon pepper and saute for five minutes or until vegetables are crisp-tender.

  • Step 5: Stir in tomatoes and saute for 3 minutes or until tomatoes are heated through.

  • Step 6: Transfer to a platter and cover to keep warm.

  • Step 7: Add marinated shrimp to skillet.

  • Step 8: Cook and stir for 2 minutes or until pink.

  • Step 9: To serve: arrange shrimp on top on Tunisian Fresh Tomato Relish.

  • Step 10: Sprinkle with freshly chopped parsley.
