Step 1: In a bowl, toss shrimp with 1 tablespoon olive oil, 1/8 teaspoons salt, lemon pepper and red pepper flakes.
Step 2: Set aside to marinate for 15 minutes at room temperature. (put in frig if your squeamish)
Step 3: In a large skillet, heat remaining 1 tablespoon olive oil over medium-high heat.
Step 4: Add bell peppers, scallions, garlic, cumin to taste, 1/8 teaspoons salt, 1/8 teaspoon pepper and saute for five minutes or until vegetables are crisp-tender.
Step 5: Stir in tomatoes and saute for 3 minutes or until tomatoes are heated through.
Step 6: Transfer to a platter and cover to keep warm.
Step 7: Add marinated shrimp to skillet.
Step 8: Cook and stir for 2 minutes or until pink.
Step 9: To serve: arrange shrimp on top on Tunisian Fresh Tomato Relish.
Step 10: Sprinkle with freshly chopped parsley.
